As Requested: What we ate for dinner… Ajiaco!

This afternoon was gray and cloudy, foiling our plans to picnic in the Parque Simon Bolivar.  Instead, our roommate and friend, Isa, made “Ajiaco” for all of us.  Ajiaco is a potato stew served with avocados, huge-kerneled corn, cream, and capers.  The stew includes a yummy combination of chicken, carrots, green onions, turmeric, and an herb that I have never heard of and that Isa didn’t know how to translate from Spanish.

If I learn how to cook only one dish while here in Colombia, this should be at the top of my list.  Perfect for fall weather in Washington D.C. or a visit to Camp Dosenberry, Michigan, when the leaves are changing.  Yummmmm…
